High-protein. Zero junk. Chicken Salad Recipe!


Here’s a chicken salad recipe that’s simple and easy to prepare, is high in protein and contains zero preservatives and unnecessary chemicals. It’s made from fewer than 10 ingredients—about 20 fewer than Costco’s Kirkland brand*

Simple and Delicious Chicken Salad

High-protein. Zero junk.

Ingredients:

• 1 lb cooked chicken, chopped

• ½ cup avocado mayo

• 1 tbsp apple cider vinegar (or to taste)

• 1 stalk celery, chopped

• ½ red onion, chopped (or green onion)

• 1 tsp dijon mustard

• 1 tsp fresh dill, chopped

• 1 tsp fresh parsley, chopped

• Salt & pepper to taste


Steps: ​Poach your chicken in heavily salted water—bring water to a boil, add the chicken and turn off the heat and cover for 20 minutes. Optional aromatics: celery, garlic, onion, bay leaves, peppercorns, parsley. Once cool, dice or shred and mix with everything else. Adjust mayo, salt, or vinegar to taste.Serve on toasted sourdough—or straight from the bowl.
